Things have been going well. I allowed myself a marginal "cheat" day on Mother's Day. I had planned to be really good. I ordered a breast of chicken and steamed veggies at Macaroni Grill with the instructions NO butter or oil at least 5 times. My plate (after I had eaten of course) looked suspiciously like it had little droplets of some sort of oil hanging around. SO...I got mad and ate some See's truffles they gave us for MD at church... AND I ending up eating a few naughty things at the beach that afternoon with my girlfriends. YES...I paid for it on Monday-up 2 lbs. I got right back on track though and I am now down 9 lbs. all together. Down almost 5 lbs in 3 days! Yipee! We'll see what the scale brings tomorrow (historically a small stall).<br />Today, I had to eat both meal "out" again...but did very well.<br />Chopped chicken salad (chicken, lettuce, fresh basil) with cucumbers, tomatoes, and every veggie they had piled on top. I forgot my dressing so I had a little balsamic vinegar (I know not a perfect thing to eat...but so yummy.<br />For dinner I had the most delicious seabass with a side of steamed veggies and steamed spinach. For dessert, they made me a cup of fruit with raspberries, mangoes, and strawberries. HEAVEN!<br /><br />Today was much easier...it was so busy I didn't have time to be hungry. I think it's because my stomach had no "reserve" swimming around in it. I was a little more cranky today, but made it through. Here's what I ate:<br />Lunch:Peppers and Egg White Scramble w/ Salsa<br />Snacks: sugar snap peas; 10 calorie jello, pineapple (I know, high in sugar-i only had a little) 2 melba toasts<br />Dinner: I made a HUGE batch of veggie soup and I felt SO much better. I added lean beef to my portion and the veggies were so yummy I really didn't even want the meat.<br />***Weight: This morning I was down 3 lbs. That sure kept me "on track" today...this WORKS! I am sore already but it feels so good to be working on getting my health back. The first couple of days have been a little rough because I did myself the disservice of stretching out my stomach these last couple of months...but it WAS fun. I really don't regret putting back on some pounds, because I truly let myself enjoy the holidays and all the yummies of the season...AND, it made me really ready to start dieting again. Enough about me...<br /><br />Here is a recipe for those cold January days...<br /><br />Beef and Cabbage Soup<br /><br />3 ounces lean beef<br />cabbage<br />2 cups beef broth<br />2 T. Bragg's<br />2 cloves garlic, minced<br />1 T. onion<br />1/4 t. thyme<br />1/4 t. rosemary<br />cayenne to taste<br />salt and pepper<br /><br />Combine beef and spices in saucepan, bring broth to a boil. Add cabbage and reduce heat to simmer for 30 minutes or so. Today, I had to go bra shopping because all of my bras are too big...this is a GOOD thing...DD's are much easier to haul around than DDD's. Too much info? Probably. I had a wonderful moment in the dressing room today with my mom. I tried on a size 8 skirt that was too big...and got to ask the lady if she could, "Please find this in a size 6". I turned to my mom as I said it and was grinning from ear to ear. Bragg's<br />1 T. chopped green onion<br />1 clove garlic-minced<br />fresh cilantro<br />1/2 t. grated fresh ginger<br />1/8 t. chili powder or red pepper flakes<br />pinch of cinnamon<br />stevia, salt, and pepper to taste<br /><br />Heat broth-add dry spices, Bragg's, garlic and onion and bring to a boil. Reduce heat and simmer for five minutes. Add beef and celery an cook for 20-30 minutes till done. Add salt, pepper, and stevia. Bragg's liquid aminos<br />1 clove garlic, minced<br />1 T. onion, minced<br />1 T. dried herbs (of your choosing- I like basil or oregano)<br /><br />Tenderize steak (good for getting out aggression) with manual meat tenderizer until flat and thin. In a frying pan, combine cabbage or spinach with spices, vinegar and Bragg's and cook until tender. Spoon cabbage mixture into pounded flank steak and wrap into a roll. Fill the bottom of the pan with a little water or broth. Salt and spice the top of the roll. Bake at 375 for 20 minutes. Baste occasionally with juices to keep from drying out.<br /><br />***Hubby lost another pound yesterday-I lost 1/2 a pound. He ate jordan almonds and a spicy chicken salad at Pei Wei. I was good.
