I've been on the 500 calorie for 3 days and I'm down 4.8 pounds! I'm so excited. I really do LOVE this diet. The first couple of days have been a little rough because I did myself the disservice of stretching out my stomach these last couple of months...but it WAS fun. I really don't regret putting back on some pounds, because I truly let myself enjoy the holidays and all the yummies of the season...AND, it made me really ready to start dieting again. Enough about me...
Here is a recipe for those cold January days...
Beef and Cabbage Soup
3 ounces lean beef
cabbage
2 cups beef broth
2 T. Bragg's
2 cloves garlic, minced
1 T. onion
1/4 t. thyme
1/4 t. rosemary
cayenne to taste
salt and pepper
Combine beef and spices in saucepan, bring broth to a boil. Add cabbage and reduce heat to simmer for 30 minutes or so. Add additional water or broth as needed. ***You can also substitute chicken and chicken broth.

Thai Beef Soup
Now that the weather is cooling, I think I'm going to try some soups. This one looks good...
3 oz. beef
celery
2 cups beef broth
3 T. Bragg's
1 T. chopped green onion
1 clove garlic-minced
fresh cilantro
1/2 t. grated fresh ginger
1/8 t. chili powder or red pepper flakes
pinch of cinnamon
stevia, salt, and pepper to taste
Heat broth-add dry spices, Bragg's, garlic and onion and bring to a boil. Reduce heat and simmer for five minutes. Add beef and celery an cook for 20-30 minutes till done. Add salt, pepper, and stevia. Garnish with fresh cilantro.
***Hubby is done-he decided he's happy where he is.
***I'm done 6 lbs! Woohoo!!!
